Hot pans rule out more materials than people expect

Worktop comparisons are almost all written by people who sell worktops, and it shows. Granite fabricators explain why granite is best; quartz suppliers explain why quartz is. Both are right about their material's strengths and quiet about its weaknesses, and neither can tell you which suits your kitchen because neither has asked anything about it.
The gap is not information — the properties of these materials are well documented. The gap is weighting. Heat resistance barely matters in a kitchen where nothing hot ever touches the worktop, and it is decisive in one where pans come straight off the hob. Stain resistance is academic if spills get wiped immediately and central if they do not.
So this asks how the kitchen is used, weights accordingly, and publishes every weight it applied. If you disagree with one, you can see exactly what it did to the ranking rather than trusting a number that arrived from nowhere.
The trade-offs nobody selling one material will tell you
Engineered quartz is the most-recommended material in kitchens today and it deserves most of its reputation: non-porous, so it never needs sealing, extremely consistent, and available in a huge range of colours. What gets mentioned less is that it scorches. The resin binder that holds the quartz together degrades under heat, and a hot pan leaves a permanent mark that cannot be polished out. In a kitchen where trivets are not going to happen, that is disqualifying.
Granite takes heat better than anything else here — you can genuinely set a pan on it — and it is harder than quartz. Its weakness is porosity: it needs sealing roughly annually and it will stain if that is neglected, particularly with oil.
Marble is the one people fall in love with and the one that most often disappoints. It does not merely stain; it etches. Anything acidic — lemon juice, wine, vinegar, tomato — reacts with the calcium carbonate and leaves a dull mark that is a chemical change rather than a surface deposit. In a working kitchen, that happens within weeks.
Porcelain slab performs best on paper: it takes heat, does not stain, does not scratch and never needs sealing. Its weakness is brittleness at edges and corners, and a chip cannot be repaired. Butcher block is the opposite — it damages easily and renews completely, because you can sand the whole surface back and start again.

Cost is not the same as cost per year
Laminate at twenty dollars a square foot looks unanswerable next to granite at sixty. Over a twelve-year life against a thirty-five year one, the annual figures are much closer, and that is before considering that a laminate worktop damaged in year three cannot be repaired.
That said, annualised cost is not the whole argument either. If you are moving in five years, a twelve-year lifespan is entirely adequate and paying for thirty-five is buying something you will never use. The tool takes your ownership horizon into account for exactly this reason, capping the useful life at whichever is shorter.

What actually gets damaged, and what can be fixed
Repairability is undervalued in most comparisons because it is invisible at the showroom.
Butcher block and solid surface both fully renew. A scratched or stained solid-surface top sands and polishes back to new, and a butcher block can be sanded and re-oiled repeatedly over decades. Neither will ever look worse than the day you decide to spend an afternoon on it.
Granite and concrete are partially repairable — chips can be filled and polished with reasonable results, and both can be resealed to address staining.
Quartz, porcelain and laminate are essentially not repairable. A scorch on quartz, a chip on a porcelain edge, or a delaminated laminate seam is permanent, and the fix in each case is replacement of the affected section, which usually means the whole run.
That matters most in households with children, where the question is not whether the worktop will get damaged but what happens when it does.
- Ask for remnant pricing on small jobs. It is never advertised and it is frequently available.
- Edge profile affects price meaningfully — a simple eased edge costs far less than an ogee.
- Sink cutouts, drainer grooves and cooktop cutouts are usually priced separately.
- Undermount sinks need a material that can carry the weight at the cutout. Laminate generally cannot.
The sequence question
Worktops are templated after the cabinets are installed and levelled, not before. That is not a preference; the template is taken from the actual cabinets in the actual room, because no kitchen is perfectly square and a worktop cut from drawings will not fit.
It means a gap of one to three weeks between cabinets going in and worktops arriving, during which the kitchen is unusable. Plan for it rather than discovering it — it is one of the most common sources of frustration in a kitchen refit.
It also means the worktop decision has to be made well before that point, because lead times on stone can run to several weeks and slab selection may require a visit to the yard. If a particular slab matters to you — and with granite and marble every slab is different — go and choose it rather than accepting an allocation.

Ordering worktops before cabinets are fitted
Templates are taken from installed cabinets because no room is square. Expect one to three weeks between cabinets and worktops, and plan around it.
Safety & honest limits
- Fabricating engineered stone generates crystalline silica dust, which causes silicosis. This is work for a fabricator with proper wet-cutting and extraction, never a job for a domestic circular saw.
- Stone worktops are extremely heavy. A full slab needs several people and proper lifting equipment, and cabinets must be level and properly secured before it goes on.
- Undermount sinks depend on the worktop material and the support beneath. Check the fabricator's requirement rather than assuming.
- Never mix cleaning products on stone. Acidic cleaners etch marble and limestone, and bleach degrades sealer on granite.
